Hard Cider Mac & Cheese

You've heard of beer cheese, what about hard cider cheese?! This recipe incorporates Louisburg Cider Mill Hard Cider into a creamy and delicious meal, perfect any time of the year!










Ingredients

  • 1 lb. Pasta of Choice

  • 6 to 7 Slices Bacon, chopped

  • 3 Tbsp. All-Purpose Flour

  • 2/3 C. Louisburg Hard Cider, any flavor is fine, we used Semi-Sweet

  • 1-1/3 C. Milk

  • 2- 1/2 C. Sharp White Cheddar Cheese, shredded

  • Salt and Pepper, to taste

Instructions

  1. Cook pasta in very salty water until al denté. Drain and set aside.

  2. Heat a large saucepan over medium-high heat.

  3. Add the chopped bacon and cook, occasionally stirring for 5-7 minutes until crispy. Remove crispy bacon with a slotted spoon and set aside.

  4. Leave the bacon fat in the pot; you want about 3 tablespoons. Reduce heat to medium.

  5. Add flour and whisk together with bacon fat to form a roux.

  6. Cook for about a minute until the roux is sizzling.

  7. Add Louisburg Cider Mill Hard Cider to pot a little at a time, constantly whisking to work out any lumps.

  8. Add milk and whisk to combine. Cook, whisking frequently until the sauce has thickened and reached a low simmer, about 8 minutes.

  9. Add salt and pepper to taste.

  10. Remove pot from heat and stir in shredded cheese.

  11. Mix until the cheese is melted and you have a smooth sauce.

  12. Stir half of the crispy bacon pieces into the sauce (save the rest for topping later!)

  13. Add cooked pasta to the sauce and stir to combine.

  14. Top with remaining crispy bacon and serve immediately.
