Black Cherry Lost Trail Cupcakes

Lost Trail Black Cherry Soda is a staple here at Louisburg Cider Mill, and this recipe is the perfect way to try it!


Grab a 4-pack while you are at the store and sip on it while your cupcakes bake!









Ingredients

• 1 White Cake Mix

• 1/2 C. Vegetable OIl

• 4 Egg Whites

• Black Cherry Jello (divided)

• Cupcakes Liners


FROSTING INGREDIENTS:

• 2 Stick Salted Butter, softened

• 1 tsp. Vanilla Extract

• 1 tsp. Salt

• 4 C. Powdered Sugar

• 1 Tbsp. Half & Half

• Piping Bag and Tip

•Paper Straws (optional)

• Black Sanding Sugar (optional)

Instructions

 

  1. Preheat oven to 350º. Add cupcake liners to pan.

  2. Mix the cake mix, oil, egg whites, and soda in a bowl. Mix on medium speed until mixed well.

  3. Mix about 1/2 of the Jello powder.

  4. Add the batter into the cupcake liners until 2/3 full.

  5. Put in the oven and bake for 18-20 minutes. Let the cupcakes cool.

    Frosting:

  6. Cream the butter with a mixer until fluffy.

  7. Add in the salt and vanilla. Mix in the rest of the Jello.

  8. Mix the cherry soda and half and half together in a separate bowl.

  9. Slowly mix in the powdered sugar, 1 cup at a time.

  10. Add a little bit of the soda & half and half mixture from above in between

    each cup.

  11. Mix for 1-2 minutes until creamy. Stiff peaks should form.

  12. Add the frosting to the piping bag and frost the cupcakes.

  13. Add the sanding sugar on top.

i love the idea of using black cherry soda in both the batter and frosting; it sounds super nostalgic. i tried a similar soda cupcake once and the jello gave it that extra pop, so this one’s on my list. while these baked, i killed time reading game-show trivia at https://dealornodeal.org/ and it made the wait feel shorter. also, the other replies about random games cracked me up, i ended up on https://footballstudiodice.com/ and then https://lightning-dice.org/ and it was such a weird contrast to a cupcake recipe.
