About the Recipe
As the fall season arrives, this bread is always a sure winner. It includes two of our favorite things…banana bread and apple butter. It’s so easy and full of flavor. If you like apple butter I think this will quickly become one of your favorites. Soft banana bread with a ribbon of apple butter through it…what’s not to love!?

Ingredients
Pecan Streusel Topping:
1/4 C. Dark Brown Sugar
1/4 C. Diced Pecans
2 Tbs. All Purpose Flour
1/2 tsp. Cinnamon
2 Tbs. Cold Butter, diced
Apple Butter Banana Bread:
1 1/2 C. All Purpose Flour
1 tsp. Baking Powder
1/4 tsp. Salt
3/4 tsp. Cinnamon
1/4 tsp. Nutmeg
2 Over Ripened Bananas, mashed well
3/4 C. Granulated Sugar
2 Eggs
1/4 C. Vegetable Oil
1/2 C. Louisburg Cider Mill Apple Butter
Preparation
Preheat oven to 350º and spray an 8x5 loaf pan.
In a medium mixing bowl sift together the flour, baking powder, baking soda, salt, cinnamon, and
nutmeg.
In a large bowl mash your very ripe bananas.
Add sugar to the bananas and beat until smooth.
Add the eggs, oil, and apple butter to the banana mixture and blend well.
Add the flour mixture to the banana mixture and blend well, pour into the prepared pan.
Make pecan streusel adding all of the ingredients to a small bowl and work into the other ingredients until the mixture is crumbly.
Pour the streusel evenly over the bread mixture.
Bake in a preheated oven for 45-50 minutes.
All ovens can vary on time, to test if bread is done, insert toothpick, if it comes out clean then bread is ready to take out of oven.
