Pancake Mix Chocolate Chip Cookies

So you have pancake mix, but you aren't really feeling the pancake meal - this recipe uses up some of the Louisburg Cider Mill Pancake Mix in your pantry and makes a sweet treat everyone will love!
Ingredients
1/2 c. Butter, softened
3/4 c. Brown Sugar
1/2 c. Granulated Sugar
1 Egg + 1 Egg Yolk
1 tsp. Vanilla Extract
2 1/2 c. Louisburg Cider Mill Pancake Mix
1 1/4 c. Chocolate Chips
Instructions
Preheat oven to 375°F and line a baking sheet with parchment paper
In a bowl or stand mixer, combine the butter and both sugars
Add in egg, egg yolk, and vanilla until fully combined
With the mixer on low speed, gradually add in the pancake mix, until just combined
Add in chocolate chips until incorporated
Scoop out the batter with a ball scooper and place on the mat a few inches apart from each other
Bake for 9-11 minutes or until golden brown
Allow to cool and enjoy!
