Chewy Cherry Oat Bars

The perfect mixture of sweet and tart - these Chewy Cherry Bars are a perfect addition to any part of your day!


Made with Louisburg Cider Mill Cherry Preserves, this snack will quickly work its way into your weekly rotation!










Ingredients

• Non-Stick Cooking Spray

• 1/2 C. Butter (softened)

• 1 C. Firmly Packed Brown Sugar

• 1/2 tsp. Vanilla Extract

• 1 C. All-purpose Flour

• 1 C. Quick Cooking Rolled Oats

• 1 tsp. Baking Powder

Instructions

  1. Heat oven to 350º F. Coat 8-inch square baking pan with non-stick cooking spray or line it with parchment paper.

  2. Beat butter and brown sugar in a medium bowl with a mixer on medium speed until smooth and fluffy.

  3. Blend in vanilla extract.

  4. Mix flour, oats, and baking powder in a medium bowl until blended. Gradually add it to the butter & brown sugar mix until well combined and the crumb mix begins to form. Reserve 1/2 cup of crumb mixture.

  5. Firmly pack remaining crumb mixture into the bottom of the prepared pan to form a crust. Spoon Louisburg Cider Mill Cherry Preserves over the crust, spreading evenly. Sprinkle with reserved crumb mixture.

  6. Bake 30-35 minutes or until lightly browned.

  7. Cool completely on a wire rack. Cut into bars.
